    Tender Beef strips in a ginger and light soy sauce recipe

    Ingredients

     

    200 g thinly sliced best lean steak

    100 g boiled and drained long grain rice

    1 tsp ground ginger

    1 g peeled grated ginger

    1 tsp caster sugar

    1 green pepper sliced

    5 tsp light soya sauce

    Salt and black pepper to taste

    1 small onion sliced

    5 g peas

    5 g sweet-corn kernels

    1 medium celery stick finely chopped.

    2 tsp vegetable oil

    2 tsp of water

     

    Method

     

    (1) Into a wok or frying pan go’s the oil, peas, sweet-corn, water, and soy sauce on a medium heat.

     

    (2) Next add the onion, green peppers, and celery, salt and pepper, and cook for 4 minutes.

     

    (3) Now add all the ginger, sugar, and the beef, and cook until the meat is tender.

     

    (4) Turn out onto a bed of rice.

  • Apricot pork with stir fry vegetables

    Apricot pork with stir fry vegetables


    Ingredients

     

    400g sliced lean pork

    slice up 1 medium onion

    cut up 10 dried apricots into small bits

    40g sweetcorn

    3 tbs of olive oil

    150g fresh beansprouts

    40g peas

    4 tbs soy sauce

    5 tbs of water

    1 medium slice red pepper

    two crushed garlic cloves

    2 tsp lemon juice

    salt and black pepper to taste

    200g of cooked long grain rice


    Method

    (1) Place all Ingredients, and mix together well with water, except the bean sprouts, and olive oil, and soy sauce, into a bowl and cover with cling film and leave in fridge over night.

    (2) Next heat up the oil & soy sauce, in a large pan on a medium heat.

    (3) Add all the ingredients to the hot oil and cook and toss them until almost cooked.

    (4) Now mix in the bean sprouts and cook for a further 3 - 4 minutes.

    (5) Now serve the apricot pork and vegetables with the cooked rice.

  • Cucumber and spice stir fry

    Cucumber and spice stir fry


    Ingredients


    6 tbsp of chicken stock mixed in water

    1 tsp of mild or hot what every you prefer curry powder

    3 crushed garlic cloves

    1 tsp of ground coriander

    2 small cucumbers

    2 tsp of sesame oil

    30 g black soya beans that have been soaked at least 10 hours in water

    1 tsp of ground black pepper

    1 pinch of salt


    Method


    (1) Start by boiling the soya beans that are just covered by water for around 7 to 9 minutes, then put on a simmer and leave for about 80 more minutes.


    (2) After beans have finished cooking, drain of liquid through a strainer, and put them to one-side.


     

    (3) Now we peel off the skins of the cucumbers and cut them in half and then using a spoon remove the seeds.


     

    (4) Now we need to get our wok or large frying pan heated up, then add the oil, then add all the ingredients except the cucumber and stock and cook while stirring for 45 seconds.


    (5) Next add in the cucumber and cook and stir for a further 30 seconds.


    (6) Finally pour in the chicken stock and cook for 5 minutes more or until cucumber is just tender.

    My Vegetable Stir fry recipe


    Ingredients



    10 g edamame beans

    2 Sliced mushroom

    10 g bean sprouts

    10 g carrots diced

    Half an onion sliced

    1 medium red pepper diced

    5 g green cabbage

    Salt pepper to taste

    1 tsp garlic powder

    100 g of boiled long grain rice


     

    Method


     

    This is a mixture of vegetables, that I use for a lot of my stir frying, just add meat or fish or whatever you want, stir frying is so easy to do, and quick, a good thing if you are pushed for time.


    Simply fry the vegetables in whatever oil you prefer and add what you like.

     

    Serves 3 to 4
